Traulsen’s VPS pizza prep tables include several time-saving and labor-saving benefits for the operator. For instance, the daily cleanup routine typically associated with the frost build-up and condensation found in traditional "cold wall" designs is eliminated. In addition, product can be safely stored overnight right in the rail by simply covering the food pans with plastic wrap and then lowering the rail cover, expediting start-up each morning. The standard 12" front-to-back raised rail is designed for pans to be placed in full view, making them easy to reach. These are all gently sloped, allowing them to be completely filled, further reducing the labor required to operate.

Built to Last. The VPS pizza prep tables feature stainless steel exterior construction, including the work surface, rail and covers, front, sides and louvers. The interior is durable, coved stainless steel. The stainless steel doors are self-closing. There are damage-resistant stainless steel interior door liners.

A self-contained refrigeration system cools the cabinet interior as well as the raised ingredient rail through the VPS. A hot gas-type condensate evaporator precludes the need for a drain or electric heater.
